Autumn's New Shochu, Fermented in Clay Pots
Autumn marks the season of Shinshu (new spirits). Crafted from this year's harvest of red sweet potatoes, this Imo Shochu is produced using traditional handmade Black Koji and fermented in Kame (earthenware jars).
The Toji (Master Brewer) carefully prepares the sweet red potatoes. Bottled directly after distillation without dilution, this Genshu (undiluted spirit) captures the raw, intense aroma of the fresh distillate.
Please enjoy this fresh taste—a privilege usually reserved only for the Toji at the distillery.
