Autumn is the season of new sake. This year's harvest of red sweet potatoes is used to make shochu in the traditional handmade black koji jar. The sweet red sweet potatoes are carefully prepared by the toji. The rough aroma of the shochu immediately after distillation is bottled without dilution. Please enjoy the fresh taste that only the toji can usually experience.
