The Isawa Muscat Bailey A grapes, nurtured by the "warm climate during the growing season," have a "high sugar content" and a "soft, low astringency, and aromatic" taste.
At Mars Wine, we have established a special brewing method based on the experience cultivated in Isawa, and we have brewed an extremely sweet red wine by freezing the grape fruits before processing.
Using only fully ripe Isawa-grown Muscat Bailey A grapes harvested after October, this wine is carefully crafted with meticulous attention to detail, showcasing a "deep aroma and refined, rich flavor" that could not be expressed in traditional Muscat Bailey A wines. By freezing the grape fruits and removing moisture, we use a delicate and low-astringency free-run juice from Isawa, concentrated 2 to 2.5 times more than usual, for fermentation.
Selected wine yeast suitable for the grape variety is used, and thorough fermentation temperature control is carried out to maximize the characteristics of the grape variety.
