Yamanashi Prefecture's Nirasaki City, Hosaka District, located at the foot of the vast Chigayama Mountain, which rises from the northwest corner of the triangular Kofu Basin, is a representative wine grape producing region in the prefecture. The southwest slope of the mountain foothills, at an elevation of 400 to 700 meters, belongs to the "sunshine hours" are long and "lightly rainy and cool climate zone," and grapes nurtured by the natural environment brought by the "wind running through the foothills" and "slightly viscous soil" have a "high concentration" and "strong backbone" flavor. At Hombo Shuzo Mars Yamanashi Winery, by applying the techniques cultivated over more than 100 years since its founding as a pioneering figure in the jar-brewed shochu making to wine making, they have realized a wine making that combines "ancient wine making with jars" and "modern wine making methods." The wine made from Koshu grapes from the Hosaka district, fermented slowly in jars, has a "elegant and calm aroma" and a "smooth taste with a lingering finish." It is a masterpiece of a slightly dry white wine made in jars.
