Deep Aroma and a Rich, Complex Palate
In the Koshu sweet category of the 2007 Japan Wine Competition, Isawa-cho, Fuefuki City, Yamanashi Prefecture, located in the eastern part of the Kofu Basin, is a representative fruit-growing area in the prefecture. The koshu grapes of Isawa, nurtured by the well-drained sandy and gravelly soil deposited by the Fuefuki River originating from the Chichibu mountain range, and the warm climate during the growing season, have a "high ripeness," "soft richness and sweetness," and a "fragrant" taste. This wine, made from fully ripe koshu grapes from the Isawa region, is aged in barrels for a long period using a special winemaking method (cryoextraction) that involves freezing the grape fruits before processing. Unlike traditional koshu wines, this extremely sweet koshu wine is characterized by "deep aroma and rich flavor" that could not be expressed before. (*Prestige: meaning fame and honor.)
