I used Delaware grapes harvested in the Kofu Basin in Yamanashi Prefecture to make this. The wine is currently undergoing primary fermentation, and after fermentation is complete, we performed disgorgement and dosage. This sparkling wine has a rich, fresh aroma characteristic of the Delaware variety, with a sweetness when tasted and a rich, fruity flavor that spreads out. *Disgorgement: Also known as "mouth removal," it is a delicate process of removing the sediment collected at the neck of the bottle after riddling (bottle turning). *Dosage: After disgorgement, a process of adjusting the volume and sweetness by adding sugar solution, etc.
