Kame maboroshi

Fermented & Aged in Traditional Clay Pots
Using the sweet potato "Koganesengan" from Minami Satsuma, Kagoshima Prefecture, and black koji, this shochu is made through a unique process called "kame-zukuri" at Tsunuki Kishogura, the birthplace of hombo sake brewing. The shochu is stored and aged in kame (earthenware jars) placed neatly inside the "kura" (storehouse).

By storing the kame in the kura with minimal temperature fluctuations throughout the seasons, this imo shochu, made through kame-zukuri and kame storage, offers an elegant, soft, and rich flavor with a mature and sophisticated taste developed through aging.
