6-Year, Pot-Aged, Polished Imo Shochu
In general, in traditional shochu, the skin of "sweet potato" is not completely removed. This unique shochu from Tsunuki Kishogura uses "polished imo" where sweet potato is polished like making junmai daiginjo sake by polishing rice.
The roughness of the skin is removed to create a smooth genshu, which is then aged for six years in a kame jar.
A limited number of 1300 bottles are available for sale at the "Hojo" visitor center adjacent to Tsunuki Kishogura.
