I used Koshu grapes harvested in the Kofu Basin in Yamanashi Prefecture to brew. This dry sparkling wine, made by carefully fermenting only free-run juice at low temperatures, has a refreshing acidity that complements the nuances of fresh green apple and grapefruit, resulting in an elegant finish. The fine bubbles enhance the dining table with a festive atmosphere.
