I used Koshu grapes harvested in the Kofu Basin in Yamanashi Prefecture to brew. This sparkling wine, made by carefully fermenting and aging only free-run juice at low temperatures, has a smooth taste that harmoniously combines the soft nuances of pear and white flowers with a gentle sweetness. The fine bubbles enhance the dining table with a festive atmosphere.
