This special limited edition 11-year aged Mugi shochu genshu, "ONZE," is a Yakushima-produced Mugi shochu made at Yakushima Denshogura. Made with domestically grown barley and soft water from Yakushima, it is crafted using traditional methods of primary and secondary fermentation with a black koji kame jar that has been in existence since the Meiji era.
The genshu was quietly aged in the kame for 11 years in a tunnel warehouse located at the foot of Mt. Yakushima Taichu, in a cool environment throughout the year. To preserve the flavor of the genshu, it was released directly from the kame without adding any water. The genshu was slowly matured in the deep and humid forest of Yakushima, where trees that have lived for thousands of years and a variety of plants thrive. Enjoy the flavors of cocoa, maple syrup, and the essence of Yakushima's forest. * "ONZE" means "eleven" in French.
